Summer Squash

One of my very favorite vegetables is summer squash, otherwise known as zucchini. The best way to grow zucchini is in a warm climate because it does not react well to cold weather. Zucchini patches will grow best in direct sunlight, and do not produce well in shade. Soil with good drainage is the best type for this vegetable, even though it can grow in pretty much any type of soil. You want to harvest this plant when it is 4 inches long and the skin is still tender.

A great recipe to use with this vegetable is lemon orzo primavera. The recipe for this can be found here.
